Pork Griots - charbroiled medallions of
pork tenderloin marinated in lime juice,
orange juice, garlic and chilies, served with meaty
Black Beans slow simmered with ham and sherry,
a side of Garlic Rice steamed in vegetable broth,
some spicy Cabbage and Cilantro sauteed
with onions, garlic, ginger, tomatoes and chilies,
and sliced crusty bread with butter on the side.
For dessert, luscious Sweet Potato Rum Cake
served chilled with a rich coconut rum frosting

Condiments: Ajilimojili - a wonderful lime & garlic pepper relish
Pimiento Salsa - roasted peppers, red onions and cilantro
Ti-Malice - spicy cabbage slaw

Vegetarian Entree - served all month
Start with a bowl of Creamy Squash Soup -
summer squash and zucchini blended with garden fresh herbs
 and cream for a delicious summer soup, accompanied by a Corn Muffin.
Then enjoy the Congris - a ubiquitous and delicious staple
throughout the Caribbean and Central America,
flavorful and hearty red beans and garlic rice,
served with Coconut Curry Vegetables -
coconut milk, onions, and ginger provide a mellow base
for the curry flavored sauce tossed with stir fried vegetables.
A side of our favorite Coleslaw, Jamaican Jerk style
compliments the meal

Beer & Wine Suggestions: Red Stripe Beer, (of course!) from Jamaica, or the more robust Dirty Bastard Scotch Ale draft. If you prefer wine - Chilean Big Tattoo Red is a good match for the Pork Griots or the Congris, as well as the bodacious Fat Cat Pinot Noir. If you prefer white with the vegetarian meal, New Zealand's Redcliff Sauvignon Blanc or Michigan's Bel Lago Chardonnay/Pinot Grigio both pair nicely.

Start with some Coconut Corn Coo Coo -
corn meal polenta cooked with coconut milk,
served warm and topped with an elegant sauce of
 chicken broth, tomatoes, white wine, banana peppers and a few raisins,
served with a side of sliced crusty bread and butter. The main course is
Tuna Chop - an 8 oz tuna steak charbroiled and topped by
a fresh, garlicky Mango Salsa. Accompanied by tasty
 Sweet Potato Home Fries, grilled with onions and green peppers,
and a colorful Vegetable Salad of tomatoes, cucumbers, raisins
and peanuts tossed in a cilantro vinaigrette
 served over fresh spinach and sliced bananas.
